When
it comes to needing food fast, our fast food go to is always Chipotle.
Our whole family loves it and the customization makes it easy for
everyone to get exactly what they want.
Our house is also always the
gathering place for extended family gatherings and special occasions,
where I am the hostess with the mostess!
I cannot be more thrilled to know that Chipotle now offers catering in the Kansas City area! Your guests can create their own tacos and bowls, with the same
delicious ingredients they can find in our restaurants. It’s easy to set
up and comes with everything you need: napkins, utensils, stands,
chafing dishes and fuel to keep everything hot.
Chipotle
has graciously provided me with a coupon to try out The Big Spread for
my next event which will be coming up in August. We have extended family
coming in town from Seattle and it will be a party at our house for
three days straight! I promise to give you an update on how everyone like the spread and my experience with Chipotle catering.

I especially love
Chipotle's corn salsa and with sweet corn in season, I got a few ears
and did some recreating of my own and have to say it came pretty close so I have shared my recipe with you below.
Ingredients
6 ears fresh corn, shucked and cleaned
chopped fresh cilantro to taste
2 jalapenos, seeded and chopped (save seeds to add in for additional heat if desired)
1 lime, juiced
1/2 red onion, chopped
salt to taste
honey to taste.
large stock pot of boiling water
Bring pot of water to boil. Add cleaned corn and cook 4 to 5 minutes. Remove corn and allow to cool. Chop cilantro, jalapenos, and red onion and place in mixing bowl. Cut corn off cob and add to other ingredients. Add lime juice, salt and just a drizzle of honey. Mix well and serve with chips!
Yield 2 cups
